The Start of a Delicious Tradition
My kiddos are at the perfect age for us have themed dinner nights, because then they always know what to expect, even if they forget and ask “what’s for dinner” as soon as I pick them up. It’s also a way for me to make dinner planning a little easier on myself.
So, when my body was seriously craving soups for the last few week, I decided to make ti a family thing and create #SoupSunday. It’s kind of genius, because after a day of running errands or taking advantage of a day with the kids, sometimes I just don’t have the energy to make a full meal. So, having something easy to throw in a big pot, or a soup cooking in the crockpot is just a perfect way to go, in my opinion.
If you love this and want to start your own #SoupSunday, post a pic on social media and tag it because I want to pass along your favorites!
Soups Don’t Have to Take All Day (because who has time for that?)
People are often a little surprised to find out that as a wellness coach, I don’t get all twitchy about the food I eat. I generally like to make well-rounded wholesome meals for my family, but that we don’t also eat out and make the much needed time-saving PB&J, too. I coach clients using a mindful eating approach and listening to our bodies and how they respond to certain foods.
I’m all about wellness for the modern day busy mom, which means sometimes mental health and convenience after a busy day takes priority over a perfectly cooked family meal, and I’m 100% okay with that.
So, you might notice that some of these recipes wouldn’t fall under someone definition of “healthy” and none of them are going to need you to spend all day in the kitchen chopping and prepping, but I’m totally. Life is so much more rich when you can let go of the food guilt and enjoy the full experience and flavor. And there’s really no better way to do that than with a delicious soup.
With that being said, I hope you’re ready for some serious deliciousness! Because here are my top soup recipes that you must make if you’re a busy mom!
The Top “Must Make” Soup Recipes
Cozy Autumn Wild Rice Soup
Lemon Chicken Orzo Soup
Sweet Potato Bacon Chowder
Easy French Onion Soup Recipe
Seriously, The Best Healthy Turkey Chili
Cozy Autumn Wild Rice Soup (Gimme Some Oven)
I love a good wild rice soup recipe, but the idea of having to cook the rice makes me think it takes too much time to make it worth it… unless you can find a hack. It’s time to break out that Instant Pot that you HAD TO HAVE last year that’s been sitting in the pantry ever since and bring it back to life. This simple recipe helps you cut down the cooking time and make this soup recipe the perfect fit for a #SoupSunday.
Lemon Chicken Orzo Soup (The Girl Who Ate Everything)
Lemon isn’t usually something I think about putting in a soup, but it’s really the perfect addition to this one. I love making this soup when I feel a little under the weather. It’s filling without making you feel completely stuffed and I love that it only takes 25 minutes to make.
Word of warning: The first time I made this recipe, I didn’t think the recipe called for enough orzo pasta with all the soup I had made, so I added in a little extra. Let’s just say we ended up with a nice pasta dish that resembled the soup! The pasta expands as it cooks and it soaks up some of the soup along the way, so trust me when I say to follow the directions on that one!
Sweet Potato Bacon Chowder (12 Tomatoes)
I just had this last night for dinner and it was so freaking good. If you love sweet potatoes, this one will be a winner for sure. I love how you blend part of it up to make the soup but keep a few whole dices sweet potatoes in the soup to give it texture and a little more boldness. This one also refrigerates perfectly, so you can make extra and keep it for lunch or an easy-peasy weeknight dinner!
Easy French Onion Soup Recipe (Lavender and Macarons)
If I ever went back in time and decided to start a food blog instead of being a coach, I would have made it all about French Onion Soup and Bread Pudding Reviews to different restaurants. French Onion Soup is one of my all-time favorite soups. This one doesn’t really hit the “super quick” button when it comes to soup making, but I love how this recipe gives you instructions for making a larger batch of soup and freezing the leftovers for another day. I’m all for a future easy dinner night when you’ve has a crazy day!
If you’re willing to have a little patience, this recipe is super easy to make and turns out so good!
Seriously, The Best Healthy Turkey Chili (Ambitious Kitchen)
I’m not really sure you can go wrong with any of the Ambitious Kitchen Recipes, but this one is one of my favorites on the whole site. It’s so easy to throw into a slow cooker in the morning and come home to a delicious and perfectly cooked chili that also leaves you feeling good when you’re done eating it.
I love grabbing a quick mix box of corn bread to go along with this recipe. Even the kids get excited when we’re having this recipe, it’s seriously THAT good!
