Ever spend time making a dinner you think everyone will love, and when you sit down to eat your picky eater of a kid won’t touch it? Don’t worry, you’re not alone. I’ve totally been there myself and I’m sure a few other mamas can relate to this too.

Finding meals that are fast, easy, taste good, and the whole family will love can be a huge challenge. But, having a picky eaters in the family myself, I’ve found a few recipes that are sure to please everyone!

So, I’m excited to announce the first of our summer series – Kid-Friendly Dinners. Each week, I’ll be selecting a simple and customizable meal idea for you to try out with your own family.

This summer series comes with a small disclaimer. First, I don’t do meal planning or recipe creation as part of my wellness coaching program. But, it is something I get requests for all the time. So, when I tell you on my Instagram stories that I’d love to hear your ideas, I seriously do listen! 🙂

I couldn’t think of a better one to start with than a “go-to” in our household, Kid-Friendly & Delicious Chicken Burrito Bowls.

Here’s what I love about these chicken burrito bowls. They can be made in a way that all the toppings can be put on the table for each person in the family to decide what they want. In our house, I put the brown rice and chicken in everyone’s bowl, and then get to choose which veggies and how much they would like to add. 

My kids are in love with bell peppers, so that tends to get set out at every meal to ensure they are getting a good serving of veggies. 

Just to give you an idea, here’s how this meal usually looks once we’ve assembled our own bowls: 

Their plate: Plain chicken, brown rice, cheddar cheese and bell peppers. 

My plate: Saucy chicken, brown rice, bell peppers, spinach, black beans, avocado, and greek yogurt (when mixed up in this bowl, it tastes just like sour cream!)

Also, if you have a kiddo who doesn’t love sauce on their meat (like mine), this recipe also has an option to take out some of the cooked chicken before you add in the sauce. So the kids can have Plain Jane chicken and you can have all the yummy sauciness you want!

Kid-Friendly Chicken Burrito Bowls

Free Recipe for a delicious kid-friendly chicken burrito bowl the whole family will love!

Enjoy this family-style dinner that everyone can customize themselves! Pick and choose the ingredients you want to go in your burrito bowl to make it one of the easiest and most delicious go-to meals you'll have in at your house! Depending on if your kids are picky eaters or not I've included an option below to let you cook their chicken without the sauce while still letting you enjoy the extra flavor.

Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes

Ingredients

Instructions

  1. Cut chicken into 1/4 inch strips.
  2. Using a sauce pan, heat up 1 tablespoon of avocado oil (or oil of your choice)
  3. When oil is hot, add chicken slices and saute until cooked through, stirring frequently.
  4. **For picky kids who don't like sauce** - once the chicken is cooked through, pull out enough chicken for your kids' meals and keep the rest of the chicken in the pan.
  5. Add Frontera Chicken Taco Skillet Sauce 8 oz to the pan and bring to a boil. Then, reduce down to a simmer and let simmer for 10 minutes while you cut up the rest of your veggies.
  6. Place veggies in serving bowls and allow everyone to build their own burrito bowls!
